I love the combination of nuts and chocolate. I get this from my dad who inspired this recipe. When I complained that I didn’t have enough people to gift baked goods to this holiday he was quick to volunteer to become a receiver. He was also quick to add that he wanted cookies with walnuts and chocolate.
I adapted this recipe from here and switched the bittersweet chocolate for dark (high in antioxidants). From a Nutrition and Wellness Coach perspective, adding protein (nuts) to a dessert is a great way to cause satiety and keep blood sugar levels stabilized. You see, eating healthy doesn’t have to be all kale and seitan.
1 stick of softened butter + 3/4 cup brown sugar + ½ cup and 1 tablespoon white sugar + 1 egg + 1 teaspoon pure vanilla extract + 1 teaspoon kosher salt + 1 1/4 cups and 3 tablespoons of all-purpose flour + ½ teaspoon baking soda + ¼ teaspoon baking powder+ 1 cup of dark chocolate chips + ¾ cup of chopped walnuts (or nuts of choice)
1.Preheat over to 350.
2.Cream butter and sugars with mixer. Add egg, vanilla and salt.
2.In a separate bowl, mix flour, baking soda and baking powder. Slowly add to cookie batter. Add chocolate chips and walnuts.
3.Form 1 inch balls with dough and place on a cookie sheet lined with parchment paper. Bake for 7 minutes, rotate sheet and cook for another 7 minutes.
