The breakfast cookie is the answer to every dessert lover’s prayers. It’s portable, delicious and healthy enough to start your day with.
The beauty of breakfast cookies are that there is no wrong way to make them. All you need are oats, some nutritious add-ons (we chose PB and dried fruit), and something to hold them together. Our recipe is a no-bake making it extra friendly if you want to make with little ones. Make the night before and you’ll have cookies to munch on all week!
2 cup of gluten free oats + ¾ cup of raisins + 1 cup of crunchy peanut butter + 1 banana + 1/3 cup of unsweetened apple sauce + 1 tsp of salt
1.Place banana and apple sauce in blender and puree.
2.In a mixing bowl add all other ingredients, mix in puree.
3.Form into 1.5 inch wide cookies and place on a baking sheet covered in parchment paper. Allow to rest overnight and then eat. Make sure to refrigerate.
