I have a theory. If you want to eat better, you should make it as easy as possible. Waiting till you’re famished to find lunch sets you up for failure. Trust, a stop at the drive-thru is way more tempting than flipping through menus and making sound choices. That’s why I’m all about the plan ahead. It just makes life simpler. Take these salad in jars, for example. Made from ingredients most of us have in our cabinets or fridge, you can ensemble them all at once and pop one in your bag before you head out to work.
CHICKPEA & BEET SALAD
Mixed greens + shredded carrots + chickpeas + beets
GRAIN & TOFU SALAD
Mixed greens + seasoned tofu + corn + rice + beets
MEXICAN SALAD LITE
Kale + ground beef (we used this vegetarian version) + corn + cherry tomatoes + carrots
Using a sealable jar, layer ingredients of salad, leaving room in top for dressing of choice. When ready to eat, add dressing, cover with lid, shake and enjoy.
