Black Bean Mango Salad

In place of the typical baked beans this Memorial Day, put together this black bean salad instead. It’s a savory unexpected side dish with a sweet twist, thanks to the mango.  This recipe includes cilantro which people either love or HATE! We love it and think it elevates the dish. However, if you can’t stomach the idea leave it out or substitute with chopped parsley.

 

 

 

INGREDIENTS

1 can of black beans, rinsed + ½ cup diced sweet onion + 1 diced mango + ½  Tbsp of lemon juice + ½ Tbsp of lime juice + cilantro + Himalayan pink salt + pepper + garlic powder

 

DIRECTIONS

Place all ingredients but mango and juice into a large bowl, season to taste and toss. Add diced mango and juice. Mix together and serve. Refrigerate leftovers.
