If you’re someone’s guest this Thanksgiving, consider bringing one of these dishes. More creative then basic mashed potatoes and full of flavor, you’ll please the palettes of your fellow diners without spending hours in the kitchen.
WILD RICE WITH CRANBERRIES & SCALLIONS
Wild Rice + 3 chopped scallions + 2/3 cup of dried cranberries + broth (chicken or vegetable).
1. Cook rice according to package directions, using broth in place of water.
2. Take cooked rice off stove, add scallions and cranberries. Place in serving dish.
PARMESAN ENCRUSTED CAULIFLOWER
1 head of chopped cauliflower + ¼ cup of Parmesan (can be dairy based or vegan) + olive oil
1. In a preheated oven of 425, place cauliflower on a baking sheet and drizzle with olive oil. Sprinkle with cheese and bake for 35-40 minutes.
APPLE CRISP PARFAIT
5 chopped baking apples of choice + 1 ¼ cup of old fashion oats + 1/3 cup of raisins + 1/3 cup of brown sugar + 1/3 cup of apple juice or cider + cinnamon + 2 Tbsp of butter or coconut oil
1.Slice apples and place into a baking dish of 9 x 14.
2.Add butter or coconut oil to different sections of dish and sprinkle with cinnamon.
3. In a separate bowl, mix remaining ingredients and sprinkle with additional cinnamon. Add to top of apples and pat down.
4.Place inside a preheated oven of 350 and bake for 1 hour.
5.In a glass, add a layer of cream or ice cream and then a layer of crisp. Keep layering till glass is full. Serve immediately.
