While the little ones trick or treat, blend up this satisfyingly sweet but surprisingly healthy shake to celebrate Halloween. Loaded with protein (thanks, Mr. Tofu) and fibrous pumpkin, you won’t even consider taking a handful from your kid’s candy stash.
1 cup of pureed pumpkin + 1/5 of silken tofu + 1 banana + 1 ½ cups of vanilla nut milk + 1 tsp of vanilla extract + 1 tsp of powdered ginger + 1 Tbsp of maple syrup + 3-4 shakes of cinnamon + optional: whip cream and pumpkin seeds for garnish
1.Place all ingredients into a blend and mix til smooth. Serve immediately.
